Add DocumentDB to supabase/postgres image

Hi all,

first of all, thanks for this great product and developer experience!

I was wondering if you would consider to add [DocumentDB]( to the supabse/postgres image so it'd be possible to also use Postgres as a document DB if desired.

I did not yet check whether DocumentDB & PostgREST would work together in a 'symbiotic' way but I stumbled upon DocumentDB during a research on how to 'gracefully' replace MongoDB with Postgres and I thought that it could be a nice improvement!

Happy to discuss other opinions :)
