[Feature Request] User related smtp setting for sharing by mail

Hello everyone,

I love paperless and its feature to share documents directly per mail.

In a multi user instance it would be nice if it were possible to declare a user related smtp server (eg. could be set up in the profile setting of each user). If one user do not declare a personalized smtp server it will fallback to the systemwide smtp server setting (e.g. set up via env variables in docker compose stack)

An other workaround would be the possibility to set up SEND_FROM or REPLY_TO value to overwrite the mail header so does it looks like it would be send from an other email address.

Sometime the recipient write answers to the sharing mail and not everybody has access to the in paperless set up mail account.

The system wide declared smtp server could be used for notifications e.g. when a document get shared to a user.
