[Feature Request] Support a self-hostable remote OCR service

Description Context Paperless-ngx recently received a contribution around “remote OCR” connectivity, including an integration to an Azure OCR service (see: [ That’s a great foundation, but I’d like to avoid being dependent on a cloud-only OCR provider for privacy, cost, and long-term portability reasons. What I’m proposing I’d like to explore a more general provider / plugin-style OCR architecture for Paperless-ngx, building on the remote OCR work but expanding it so users can choose: 1. Self-hosted / on-prem OCR (remote OCR endpoint, not tied to a cloud vendor), *and/or* 2. Pluggable OCR modules integrated directly into Paperless-ngx (no extra dependent service required) My preference is “self-hostable first”, but I’m explicitly *not* aiming to force Paperless-ngx to depend on a separate service.
