[Feature Request] Selective / Conditional Remote OCR Routing (Azure OCR)

Description First off, huge thanks for the release of version 3.0! It's packed with great new features, and I really appreciate having Remote OCR available as a option for complex documents. That said, in v3.0, all documents are routed through the external provider (e.g., Azure) when enabled. Sending every single document to a cloud provider is often unnecessary, increases API costs, and raises privacy concerns for sensitive documents that only require basic local OCR. ​I propose a metod to allow users to conditionally trigger Remote OCR instead of applying it globally to all incoming documents. Here some ideas: • ​Workflow Integration: Add an action in Paperless Workflows to trigger "Remote OCR" based on conditions (e.g., specific tags, document types, or correspondents). • ​Manual Trigger: An option in the document UI to manually re-run OCR using the Remote/Azure engine on demand. • ​Default Engine Assignment: Ability to keep the internal T…
