[Feature Request] Process markdown files like text files

Description Congrats on getting v3 out in full form. Been looking forward to it for a few months, glad it all turned out. 😄 I'm using workflow directories to process documents, and I ran in circles the other day because I couldn't figure out why markdown files just sat in the consumption directory. I thought it was a problem with configuration. However, as it turns out, this is a known issue, and glossed over in the past ( EDIT: I also found these in discussions/feature reqeusts that are similar: AI has immensely popularized the use of markdown documents, you've got AGENTS.md, SKILL.md, MEMORY.md, you name it, everything is markdown. Plus, it's practically the primary response format for LLMs. So naturally, documents of this type get moved around a lot more, and there's plenty of reasons to archive them.
