[Feature Request] Integrate health checks in docker-compose examples

Description First: Thanks for developing and maintaining this application! >> Currently it seems that the built docker image for [Apache Tika does not include cURL (or wget)]( The latest-full image [contained]( wget at the time of writing the original post. When you have minimal and full and you want health checks (which everyone should) then it's obvious that you should choose full. ^{Being concerned about security is a valid point, but a different topic that applies to the entire stack, not selectively (cherry-picking).
