[Feature Request] Documents permissions (default permissions per user or workflow by owner)

Description
"/settings/permissions" permissions apply everywhere except for documents
Would it be possible to add another menu/section that allows us to manage default permissions for documents ?

Another solution would be to evolve the "Workflows" so as to have a trigger on the owner of a document.
i.e.:
• Trigger (document is added) > the owner is "franck"
• Action > Assignation > ...

I have several users on my paperless and I would like my wife by default to be able to see the documents that I import, and vice versa, without other users seeing them, and without me having modified the rights every time.
