[Feature Request] Document the supported Gotenberg major version

Description

Could the [Tika configuration docs]( state which Gotenberg major version to use and update that recommendation when support changes?

Renovate proposed upgrading Gotenberg to 9 in my setup. The example Compose files pin 8.38, but I could not find a supported version range in the configuration docs. A short note would help users maintaining their own Compose files decide whether to accept a major-version update.

I have not deployed or tested Gotenberg 9. This is a documentation request, not a report of an observed conversion failure.
