[Feature Request] Allow configuring ignoring dates which are older than a certain date

Description
Additionally to ignoring specific special dates ([this feature]( I would like to ignore all dates older than a certain date.
e.g. allowing to ignore all dates older than 2000-01-01 (ISO).
Other
I think this has multiple advantages:
• the paperless config could be more easily shared as it does no longer contain potentially sensitive data (e.g. your birthday; thinking specifically about Ansible or NixOS setups)
• most incoming documents should be from the future, if not, I will specifically know before analyzing those.
• reducing false classifications on documents which are about historic data or contain (arbitrary) birthdays which you do not want all to specify
