Rename documents as we can rename collection

I don't know why, but we can't right click on document and rename them as we can do for collection.
Same for alphabetically ordering collections but there is already an issue for this #12311

In fact we can of course rename them if we enter in the document, but I don't like it. I think it would be better to edit it directly in the sidebar. _Same thing for icon but that's another topic._
