Prometheus metrics

Hello,
Something that seems to be missing from this software are metrics, either exposed using a Prometheus metrics endpoint for manual scraping or using OTLP / OpenTelemetry. It would make it a lot better to manage and observe in self-hosted environments, in addition to the current log setup.
Initially it would be enough with basic metrics like incoming and outgoing HTTP requests, basic node metrics and health states, maybe metrics for background jobs to keep track of those?
I'd be happy to have a look at this myself, as it would benefit us greatly.
