OpenAI node: image edit defaults to gpt-image-1, which OpenAI shuts down on October 23

packages/@n8n/nodes-langchain/nodes/vendors/OpenAi/v2/actions/image/edit.operation.ts defaults the model to gpt-image-1 (both the options field and the resource locator). OpenAI shuts down gpt-image-1 on October 23, 2026 ( so new Edit Image steps that keep the default will fail from that date, and existing workflows that saved it will too.
The legacy OpenAI node (packages/nodes-base/nodes/OpenAi/ChatDescription.ts) also defaults to gpt-3.5-turbo, which shuts down the same day.
OpenAI names gpt-image-2.5-sunburst and gpt-image-2.5-flare as the image replacements. Happy to send a PR for the defaults; existing workflows that stored gpt-image-1 would still need a note in the release.
