I did not find a way to localize custom fields.
I got quite a scare when I sent an invoice to a customer for whom I had set a custom language (and forgot about it).
The invoice was and is shown in the global language (see #2738), having set a BCC address, I noticed the invoice sent to the customer was in their language, with my custom fields and modified labels in the global language.
My first invoice being crappy as a result :(
