Allow users to edit environment variable in place, not just change the variable to another one

Feature
Would be great to be able to edit env variables directly when clicking on the variable name in the UI.

For instance here we would be able to edit the text and save it, making the adjustment to the currently selected environment.
Making a button that opens up the currently available env variable editor would also be great.
Why ?
1. It's pretty convenient.
2. Postman is doing it, but Insomnia is better. So how come they have a feature we don't have ? 😁
