Make sharp.limitInputPixels configurable & more stable

I have searched the existing feature requests, both open and closed, to make sure this is not a duplicate request. • Yes The feature Problem description: Huge orthodata TIFs are scattered in an external library. These bring down the immich instance frequently when thumbnails are generated. Thumbnails are generated on miniature (250p) and preview level (720p).
