[Feature] Custom day boundary for timeline grouping (e.g. day ends at 3AM)

I have searched the existing feature requests, both open and closed, to make sure this is not a duplicate request.

The feature
I would like to be able to configure a custom “day boundary” for timeline grouping.
Right now, the timeline groups photos strictly by calendar day (00:00–23:59) based on the asset's local date/time and timezone. There is no way to tell Immich that “the day ends a bit later”, which is a pretty common expectation for late-night events.
The idea is to add a setting so that, for example, if the day boundary is set to 03:00, then photos taken between 00:00 and 02:59 are grouped under the previous day in the timeline (and possibly other day-based views like Memories).
This could be a global / server setting, and/or per-user preference.
