[Feature] Add fast video metadata extraction option (skip ExifTool -ee)

The feature
I'm using Immich v3.3.3 on an fnOS NAS with 16TB of HDD storage and many large 4K 60fps LOG videos in an External Library.
Metadata extraction is extremely slow for large videos, sometimes taking a very long time per file due to ExifTool's -ee deep scanning.
Could you please add an optional Fast Video Metadata Extraction mode that skips -ee and only extracts basic metadata (date, duration, resolution, etc.)?
I don't need embedded GPS tracks or telemetry. I just want my videos to display and play normally without scanning the entire file.
This would be very helpful for users with large HDD-based NAS libraries. Thanks!
