Add support for Hebrew (RTL) in OCR

I have searched the existing feature requests, both open and closed, to make sure this is not a duplicate request.

The feature
The current Immich OCR feature does not support Right-to-Left (RTL) scripts, specifically Hebrew.
As a result, users who have photos containing Hebrew text (e.g., street signs, documents, receipts) cannot utilize the powerful search function to find these assets. This significantly limits the utility of the OCR feature for the Hebrew-speaking user base.
