docker: Use standard OCI labels to set the version

When using Docker management tools (e.g PatchPanda) the version can be read out the version from OCI labels. It would be nice is a built image includes the OCI label "org.opencontainers.image.version" (either via LABEL org.opencontainers.image.version= in the Dockerfile or via "docker build --label "org.opencontainers.image.version="
